Sriracha Shrimp Salad
Once again I found myself in an all too familiar predicament. Dinner time was fast approaching and I had no idea what I would prepare. Now that I am working from home, I must plan my days better. I have a tendency to lose track of time when working(my husband calls them squirrel moments). The resulting produced work is amazing, but my household responsibilities are ignored.
Well back to dinner, after I picked up the kids from school we stopped by our local chain grocery store. After picking up deli meats and our normal produce I still had no clue of what to prepare for dinner. But then a voice came over the intercom system, informing shoppers that the meal of the day was ready for tasting at the demo station.
I thought, "Why not give it a try? If the kids like the samples then that's what I will prepare." So we arrived at the demo station in time to try the "Southwest Panzanella-style shrimp salad with melon ices." It was a hit with the kids, so I picked up a recipe card. All of the ingredients were directly behind the demo station, which meant less running around the store with two hungry kids. (this was quickly becoming the best idea I had ever had)
We rushed home and I began to prepare the meal. I had to make few modifications to the original recipe due to my gluten free diet. I also included a few flour tortilla's for my Husband, who chose to prepare his like a burrito. Either way it was a hit. (I did set aside a few pieces of shrimp, for the kids, before adding the sriracha sauce.)
